This is what happens when nerds marry

I made baked salmon for Zoe the other night. It turned out very (very) good. The first thing that I did was clean the kitchen!

Cook time : 40 minutes.

Total time (including grocery shopping and taking sweet pictures) : 2 hours.

Then I went grocery shopping for ingredients (listed below).

Ingredients are as follows:

2 cups basmati rice
1 red pepper
1 large salmon fillet
4 cloves garlic, minced
1 tablespoon white wine
1 tablespoon honey
1/3 cup balsamic vinegar
4 teaspoons Dijon mustard
salt and pepper to taste
1 tablespoon oregano
a bunch of fresh green beans
salad (Mine was pre-made from the grocery store. Lazy, I know!)

This was set up to be a very sexy red pepper shot, but it’s blurry. I’ll need to get more lights in the kitchen…

Start the rice right away. Bring 4 cups of water to a boil. Turn to LOW (lowest it will go) and dump the rice in. Cover and don’t uncover for at least 20 minutes. I know you’ll be curious, but don’t do it!

Spray a saucepan with cooking spray, and turn it on MEDIUM.

Add the garlic…

…and cook until soft (it will take about 3 minutes).

Open your white wine…

Add the wine. Pour yourself a glass.

Measure the vinegar carefully. Too much vinegar is awful. Also, be careful not to inhale the vinegar once it starts cooking. I did this the other night, and for a few minutes I thought about going to the hospital! But the pain went away quickly…

Stir in the mustard.

Add the honey too.

Lick the honey spoon!

Simmer for 10 minutes until thick, like this:

Transfer the salmon to a pizza stone and brush most of the sauce on.

Saucy…

Sprinkle the oregano onto the salmon.

Preheat the oven to 400º and put the salmon in.

Don’t rinse the saucepan! You’ll need it for the beans. Leave any extra sauce in the pan.

It’s going to be good!

Cut the ends of the beans off and put into the saucepan.

Add some more balsamic vinegar and mustard, and maybe some honey. Stir often, and cook until the beans are soft.

Cut up the red pepper into little bits.

This will go onto the rice.

Start setting the table!

In hindsight we could have used our good dishes. Oh, well.

Serve up the rice and add the red pepper on top. Serve up the beans.

The salmon is done when it flakes easily with a fork. For me, that took about 20 minutes.

Oooh, fancy! Serve with white wine or sparkling white grape juice.
